Si no está listado en Agregar/eliminar aplicaciones, instálalo "manualmente": Busca en los CDs de instalación por los paquetes de OpenOffice (son archivos con extensión *.RPM). Abre una consola, cámbiate al CDROM y al directorio que contiene los archivos, por ejemplo
cd /mnt/cdrom/RedHat/RPMS
ahora instala los paquetes
rpm -Uvh openoffice*.rpm
cuando termine ya tendrás el OpenOffice instalado...
Bueno amigo muchas gracias por su ayuda, sin ella me hubiera olvidado de Linux y el Demo, pero me queda una duda, yo copie el archivo zip en directorio del usuario, /home/nippio/ y desde alli lo abri e instale, seguramente debera ser instalado desde el Root, pero desconozco como instala linux por ejemplo, instala el openofice, pero bueno el distribuidor me dira desde donde.

Then go to install command below.
